I start with fresh organic lemons. I hit it with 8 hours of cold hickory smoke on my husband's UDS (ugly drum smoker which he built himself) and then dry them at the lowest possible temperatures to preserve scent and flavour. Finally it's combined with the finest quality Sea Salt and freshly dried Thyme from the garden.
I simply cannot express how outstanding this Smoked Lemon and Thyme Salt is. It’s so different with two difinitive yet complementary layers of flavour. It smells and tastes divine.
