I start with fresh organic leeks from local Ontario farmers. Then I hit them with 8 hours of cold hickory smoke on my husband's UDS (ugly drum smoker which he built himself) and then dry them at the lowest possible temperatures to preserve scent and flavour.
I simply cannot express how outstanding this Smoked Leek Powder is. It’s so different with two difinitive yet complementary layers of flabour. It smells and tastes divine.
My spices are 1000% better than store bought in flavour and fragrance. I guarantee it. If you are a chef or a foodie you must have this in your repertoire.
